Ingredients
- 2 largeFlour tortillas
- 120gCooked shredded chicken (leftover roast chicken works great)
- 60gGrated cheese (comté or emmental)
- ½Red bell pepper, thinly sliced
- 1 tspCumin + paprika
- Sour cream or guacamoleTo serve
Steps

Toss the chicken with the bell pepper and spices.

Heat a large dry pan over medium heat.

Place one tortilla in the pan, add the chicken and cheese on one half, fold over. Cook for 2–3 min per side until golden.

Cut into triangles and serve with sour cream or guacamole.
Tip
To lighten: 1 folded tortilla and 30g cheese instead of 60g (~-200 kcal).
