Pasta with basil pesto & parmesan

Ingredients

  • 120g (raw weight)Penne or trofie
  • 1 bunchFresh basil (30g)
  • 40gGrated parmesan
  • 30gPine nuts (or cashews)
  • 1 cloveGarlic
  • 6 tbspOlive oil
  • Salt, pepper

Steps

    Cook the pasta al dente in heavily salted water.

    Blend the basil, pine nuts, garlic, and oil into a paste. Add the parmesan and pulse briefly. Season.

    Reserve 1 ladleful of pasta water. Drain the pasta.

  4. 4

    Toss with the pesto off the heat. Loosen with a little pasta water if needed.

Tip

To lighten: 3 tbsp oil and a splash of pasta water to loosen the pesto (~-300 kcal).
