Ingredients
- 120g (raw weight)Penne or trofie
- 1 bunchFresh basil (30g)
- 40gGrated parmesan
- 30gPine nuts (or cashews)
- 1 cloveGarlic
- 6 tbspOlive oil
- Salt, pepper
Steps

Cook the pasta al dente in heavily salted water.

Blend the basil, pine nuts, garlic, and oil into a paste. Add the parmesan and pulse briefly. Season.

Reserve 1 ladleful of pasta water. Drain the pasta.

Toss with the pesto off the heat. Loosen with a little pasta water if needed.
Tip
To lighten: 3 tbsp oil and a splash of pasta water to loosen the pesto (~-300 kcal).
