Ingredients

  • 160g (dry weight)Quinoa
  • 1Cucumber
  • 2Tomatoes
  • 1 bunchFlat-leaf parsley + fresh mint
  • 2Lemons, juiced
  • 2 tbspOlive oil

Steps

    Cook the quinoa in 320ml of salted water for 12 min. Let cool.

    Finely chop the cucumber, tomatoes, and herbs.

    Toss everything together and season with lemon juice, olive oil, and salt.

    Can be prepared the night before (better the next day).

Tip

To lighten: 1 tbsp oil instead of 2 (~-60 kcal).
