Ingredients

  • 1 (approx. 1.4kg)Whole chicken
  • 1Lemon
  • 6 clovesGarlic (unpeeled)
  • 3 tbspOlive oil
  • Fresh thyme, rosemary
  • Salt, pepper

Steps

    Preheat the oven to 200°C (400°F). Take the chicken out of the fridge 30 min before.

    Rub the outside with olive oil and generous salt and pepper. Stuff the herbs and halved lemon inside.

    Arrange the garlic cloves around the chicken in the roasting pan.

    Roast for 1h20, basting every 20 min. Check doneness by piercing a thigh — the juices should run clear.
